Extensin which fixes the cell wall of carrots has much glycoprotein and polysaccharide, specially on of these glycoproteins. Hydroxy praline's content is similar to animal collagen, therefore Extensin is a Vegetable Collagen.
- Extensin's component parts :
- Glycoprotein : 50~60% - Polysaccharide : 40~50%
- Extensin has an important role to make Vitamin A.
- Extensin has a high serine content.
